Greek Chicken Marinade

Juicy Greek-marinated chicken with yogurt, lemon, and oregano.

Ingredients

Chicken

  • 400 g boneless skinless chicken breasts

Marinade

  • 60 g Greek yogurt
  • 1 Tbsp (12 g) olive oil
  • 2 Tbsp (30 ml) lemon juice and zest(½ lemon)
  • 1 Tbsp oreganodried
  • ½ tsp salt
  • ½ tsp ground black pepper

Method

Marinate

  1. Combine yogurt, olive oil, lemon juice and zest, oregano, salt, and pepper.
  2. For chicken pieces: place in a ziplock bag with marinade and seal. For whole chicken: place on an oven dish, stuff the cavity with the juiced lemon halves, and pour marinade all over and inside.
  3. Marinate 30 minutes at room temperature, or up to 3 hours refrigerated.

Cook

Choose one method:

  • Bake (boneless, skinless): 205°C / 400°F for 18-22 minutes.
  • Grill: medium heat for 15-20 minutes.
  • Pan fry: medium heat for 18-22 minutes, depending on thickness.
  • Whole chicken: roast at 200°C / 400°F for 40 minutes.

Rest 5 minutes before slicing. Serve with grilled lemons. Refrigerate leftovers for up to 3 days.

Notes

Whole chicken: double the recipe for a whole chicken (≈1kg).
