Lime-Garlic Flank Steak

Pan-seared flank steak marinated in lime, garlic, cumin and paprika, sliced thin against the grain.

Ingredients

Steak

  • 478 g flank steak

Marinade

  • 2 cloves garlicfinely grated
  • 1 Tbsp (15 g) lime juice
  • 1 tsp (5 g) olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepperfreshly ground
  • 1 pinch chilli flakes or cayenne(optional)

Method

  1. Marinate
    • Pat the flank steak dry.
    • Mix garlic, lime juice, olive oil, cumin, paprika, oregano, salt and pepper.
    • Rub evenly over the steak.
    • Marinate for 30–60 minutes.
  2. Cook
    • Heat a cast-iron pan over high heat until very hot.
    • Scrape off any large pieces of garlic/spice that could burn.
    • Sear for approximately 3–4 minutes per side, depending on thickness.
    • For medium-rare, remove around 50–52°C internal temperature.
  3. Rest
    • Transfer to a board and rest for 8–10 minutes.
  4. Slice
    • Identify the direction of the muscle fibres.
    • Slice very thinly against the grain, ideally at a slight diagonal.
    • Spoon the resting juices over the sliced steak.
