Peanut & Sesame Hotpot Dipping Sauce

A lighter, creamier hotpot dipping sauce that combines the richness of peanut butter with the nutty aroma of Chinese sesame paste.

Ingredients

Sauce

  • 25 g natural peanut butter
  • 8 g Chinese sesame paste
  • 1 tsp (5 g) doubanjiangchilli bean paste
  • 1 tsp (5 ml) light soy sauce
  • ½ tsp (2 ml) Chinese black vinegar
  • ½ tsp (2 g) sugar or allulose
  • 25 ml warm water
  • ¼ tsp sesame oil(optional)
  • ½ clove garlicfinely grated(optional)

Method

  1. In a small bowl, whisk together the sesame paste and half of the warm water until completely smooth.
  2. Add the peanut butter and mix until combined.
  3. Stir in the doubanjiang, soy sauce, black vinegar, and sugar.
  4. Gradually add the remaining warm water until the sauce reaches a smooth, pourable consistency.
  5. If using, stir in the sesame oil and grated garlic.
  6. Taste and adjust:
    • Too thick: add more warm water.
    • Too salty: add a little more peanut butter or water.
    • Too rich: add another splash of black vinegar.
    • Not sweet enough: add a pinch more sugar.

Notes

Chinese sesame paste is much stronger than peanut butter. Keeping it to ≈25% of the nut base gives a balanced flavour without overpowering the sauce.

For a more restaurant-style sauce, top with chopped coriander, spring onions, toasted sesame seeds, or a drizzle of chilli oil.

Storage: Keeps for up to 3 days in the refrigerator. Stir well before serving.
